Yummy Fried Rice with Stir Fried Vegetable

Ingredients:
  •  Rice – 1 cup
  •  Chicken (cut into small cubes) - 3 cups
  •  Eggs – 2
  •  Carrots (julienne cut) – 2 cups
  •  Broccoli (in florets) – 2 cups
  •  Shrimps (small) - 1 cup
  •  Green chilies – 4 to 5
  •  Onion (julienne cut) – 1 cup
  •  Garlic cloves (crushed) – 3 to 4
  •  Ginger crushed – 1to 2 tsp
  •  Soya sauce – 2 tbs
  •  Black pepper (ground) – 1 tsp
  •  Sugar – ½ tsp
  •  Oil – As needed
  •  Salt to taste

Preparation:

  1. First boil the rice but don’t make it too mushy. You can use the leftover rice as well.
  2. Beat the eggs with little bit of salt, soya sauce and black pepper. Heat some oil in the pan and add the eggs and stir really quickly to scramble them. When they are done, remove from the stove.
  3. Now take a wok and heat oil. Add half of the garlic, onion and green chilies. Stir them for some time and add the carrots, broccoli and little salt, stir them for 2 minute and add the soya sauce. Again stir them put them aside.
  4. Heat oil in the wok and put the remaining garlic and onions, stir them well. Add the chicken cubes and fry them for 5-6 minutes. Add the shrimps, stir for 1 minute. Add the rice, salt, ginger, green chilies, black pepper and salt. Fry them altogether and add soya sauce. Add the sugar and scrambled eggs and stir. 
  5. Serve the rice with the stir fried vegetable.
