Simple Broccoli & Shrimp



Ingredients:

  • Broccoli – 2 (cut into florets)
  • Shrimp (washed and deveined) – 10 to 12
  • Onion (sliced) – ½ cup
  • Green chilies – 4 to 5
  • Garlic – 2 cloves
  • Ginger (crushed) – ½ tsp
  • Soya sauce – 1 to 2 tbs
  • Black pepper – 2 tsp
  • Oil – 3 tbs
  • Salt to taste
  • Brown sugar to taste

Preparation:

  1. Heat the oil in a wok. Add the onion and fry them for 5 minutes. Add the garlic and the broccoli and stir.
  2. Put in the shrimps and ginger. Fry them all for 2 minutes.
  3. Add the green chilies, salt and the black pepper; stir.
  4. Now add the soya sauce and stir for 1 minute; add sugar.
  5. Serve with hot steamed rice.

Spicy Chickpeas (Easy Chotpoti)



Ingredients:

  • Chickpeas – 4 cups (soaked overnight)
  • Potatoes – 2
  • Onion (finely chopped) – 1 cup
  • Green chilies (finely chopped) – ½ cup
  • Chaat spices – 1 to 1 ½  tbs
  • Red chili powder 1 tsp
  • Cumin powder – 1 tsp
  • Coriander powder – 1 tsp
For the tamarind sauce:
  • Tamarind – 1 cup 
  • Chaat spices – 1 tsp
  • Cumin powder – ½ tsp
  • Red chili powder – ½ tsp
  • Dried red chili flakes – 1 tbs
  • Sugar – 1 tbs
  • Salt – ½ tsp
  • Oil – 1 tsp

Preparation:

  1. Boil the chickpeas with enough water; it may take 1-2 hours. Boil the potatoes and cut them into small pieces.
  2. For the tamarind sauce, soak the tamarind in 1 cup of water for some time until it becomes really soft. Now mix it well with water and strain it on a sieve. Mix all the spices and oil with the tamarind water and put it on stove on medium heat. After 20 minutes when it will get thicker, remove from the stove.
  3. Combine the chickpeas, potatoes, onion, green chilies along with the spices and ¼  of the tamarind sauce in a bowl. Mix them well and serve them with rest of the tamarind sauce.

Cheesy Squares



Ingredients:

  • White bread slices – 2 slices
  • Green chilies (chopped) – 2
  • Sharp cheddar cheese (shredded) – 1 cup

Preparation:
  1. Cut the bread slices into small squares.
  2. Sprinkle cheese and green chilies on top.
  3. Toast them on the toaster until they are melted. Serve them with afternoon tea!

Stir Fried Vegetable


Ingredients:
  • Broccoli (cut into florets) – 3 cups
  • Bell pepper – 3 cups
  • Carrot (chopped) – 1 cup
  • Onion (chopped) – ½ cup
  • Green chilies (slit opened) – 2-3
  • Garlic cloves – 2-3
  • Ginger crushed – ½ tsp
  • Soya sauce – 2 tbs
  • Worcestershire sauce – 1 /2 tbs
  • Black pepper – 1 tsp
  • Oil – 1-2 tbs
  • Salt to taste
  • Sugar to taste

Preparation:
  1. Heat the oil and put the onion and garlic. Fry them for some time and add the vegetable, salt, black pepper, and ginger.
  2. Stir them and add the green chilies, soya sauce and worcestershire sauce.
  3. Keep stirring for 5 minutes and then add sugar.
  4. Serve with steamed rice.  

Egg Salad Sandwich



Ingredients:
  • Brown bread – 4 slices
  • Eggs (hard boiled) – 2
  • Red onion (finely chopped) – 2 tbs
  • Green chilies (finely chopped) – 2
  • Black pepper (ground) – 1 tsp
  • Garlic powder – ½ tsp
  • Paprika powder – ½ tsp
  • Mustard powder – ½ tsp
  • Lemon juice – ½ tsp
  • Mayonnaise – 3-4 tbs
  • Salt to taste  

 Preparation:
  1. Chop the eggs when they are cold. Make sure to boil them hard.
  2. Add all the ingredients with the eggs and mix them well to make a spread.
  3. Lightly, toast the bread slices. Spread the egg salad to make the sandwich and enjoy!
