Dark Caramel Pudding




Ingredients:

  • Eggs – 4
  • Half n half milk (normal milk can be used too) – 2 cups
  • White sugar – ¾ cup
  • Vanilla essence – 1 tsp

Preparation:

  1. Melt ¼ of the sugar to the pan on which you will make the pudding on medium heat. If you want the caramel to be mild, remove the pan from heat when it’s golden in color. Now keep the pan in a cool place to set the caramel.
  2. Beat the eggs with the rest of the sugar until it becomes smooth and fluffy.
  3. Add the vanilla and beat the mixture again for 5 minutes.
  4. Stir in the milk with the egg mixture.
  5. Now pour the mixture in the caramel pan and cover with lid.
  6. Now take a larger pot and put enough water where the caramel pan can float evenly. You can fill the pot approximately ¾ full with the water.
  7. Carefully set the caramel pan into the larger water pot and put this on stove on high heat.
  8. After10 minutes reduce the heat to medium.
  9. The pudding will be done in 10-15 minutes. Open the lid and let it cool for some time. Then put the pudding in the refrigerator.
  10. Garnish with your favorite fruits and serve cold.
