Ingredients:
Eggplant – 1 (cut into long thin slices)
Gram flour – 3-4 tbs
Red chili powder – 1 tsp
Turmeric powder – ½ tsp
Cumin powder – ½ tsp
Coriander powder – ½ tsp
Cilantro – 1 tsp (chopped)
Oil – for deep frying
Salt to taste
Preparation:
Mix the gram flour with all the spices, cilantro and
salt. Add enough water to make a thick batter.
Heat the oil. Coat the pieces of the eggplant into
the batter and fry them in hot oil. When they are red and crispy remove them
from the stove and put them on a paper napkin to soak the excess oil.
Serve with your favorite sauce.
